Timing of joining industry job - H1B vs OPT

I am an international and I am on my OPT working as a postdoc in a University. My F-1 VISA has expired but my EAD is valid till Jan 2011. The university is in the process of filing my H1B(cap exempt). I am at the same time looking for industry positions. What are my options in terms of joining an industry job without having to wait for October 1 join-date limitation? I also need to go to my country for my wedding in Dec and for that I will need an approved VISA application so that I can travel back to US. My future wife has her own VISA. What can I possibly do to avoid being in a situation where I do not have VISA papers to get stamped and travel back?
