Travel after H1B change of status approval notice

Hello,

My employer will be applying for my H1B visa in April and I was planning to travel to Mexico in June or July. Assuming my H1B is approved (with Change of Status) and assuming I have received my EAD card, can I travel to Mexico and come back before the start of my OPT period without any issues?
The immigration specialist from my employer has said that sometimes SEVIS records had been cancelled after H1B approval. Could this happen?

OPT start date: July 12th 2010
F1 visa expires May 20th (but is auto-renewed if re-entry from Mexico occurs within 30 days)
