H1B Transfer without enough pay stubs

I'm on H1B visa with Company A. I've got 2 new offers from Company X & Company Y, both are willing to file my H1B transfer next week.
The problem is I do not have pay stubs for months of Nov and Dec 2009 as I took "leave of absence"(with Company A approval).

I've all paystubs for rest of months in 2009 along with Jan & Feb 2010. Without Nov & Dec paystubs, my W2's annual salary(47K) for 2009 is lower than salary listed in my current LCA(54.5K).

Also, my new job offer with Company X has annual salary of about 25K-30K more than my current annual salary.

Do you think I would have any problem getting my H1B transfer(s) approved?
Is it better to do Premium Processing?
Is it a problem to file 2 H1B transfers in same week; X & Y are entirely diff companies, both offers "at will".
