i-485 Question

I work for a software firm (have been with this company for almost 3 yrs now as Soft. Eng and am currently an AOS appl. My I-140 is approved and my I-485 has been pending since Jan 08. I may be getting a job offer (similiar responsibilities) in Austin, Tx. I know AC21 can be used here but here is my situation: We recd an RFE on I-485 a week ago (which responded) and that probably means my I-485 application file has been opened for processing (and my priority dates are current) and that may mean I-485 approval anytime now. My question is: How does this impact my ability to change jobs at this point? What if I am in the middle of changing this employer and get an approved I-485?
