EB2 Filing

I have dual status, H1 and AOS status from my wife (EB3 filing in July 2007). I am citizen of Nepal, and since it is taking long time to get my GC from my wife's end,I have decided to process my own GC process. My employer is ready to process my GC but I am not sure if I qualify for EB2 or not because the university from where I completed my master (University of Northern Virginia in US) is not well recognized. The university issues I-20, CPT and OPT but I am not sure if my labor would get approve from the degree of this university. I also have 3 yrs of experience in IT field. Could you please provide some of my options to file in EB2? I am planning to travel out of US in Advanced parole (don't have USA VISA), do you see any risk? and can I stay out of US more then 30 days in Adv paro?
