Options to change company while on EAD

I-140 approved, Substituted labor - priority date July 2005 (EB3-ROW), I-485 pending, working on EAD, 6 years H1B expired on April 2009. Current Company's attorney did not provide me the ETA-750A, so, I do not know the Job Description mentioned in labor application. But in ETA-750B, it was mentioned as Software Engineer. Now I got a very attractive job offer from another company. The new company is willing to sponsor me if required. Will it be safe to Use AC21 without knowing the job explanation in approved labor? Or Shall I go for new Labor process? If I go for new labor, how long it will take get it approved (EB3 vs EB2)? When I can join to new company, immediately after new labor is filed from new company? Are any options other that AC21 available to change the company?
